Yield: Makes 24 cookies

Ingredients:

  • ½ cup butter or margarine, softened
  • ½ cup granulated sugar
  • ½ cup honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups quick-cooking rolled oats
  • 1 cup whole wheat flour
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • 1 cup raisins, chocolate, or butterscotch chips

Directions:

  1. Prepare the Dough:
    In a medium bowl, beat softened butter and sugar until thoroughly combined. Add honey, egg, and vanilla extract, mixing until smooth.
  2. Combine Dry Ingredients:
    In a separate bowl, mix oats, flour, salt, cinnamon, and baking soda. Gradually blend the dry mixture into the wet mixture. Fold in raisins or chips.
  3. Shape the Cookies:
    Drop the dough by rounded tablespoonfuls onto a greased baking sheet, spacing evenly.
  4. Bake:
    Bake at 350°F for 12 to 14 minutes, or until cookies turn golden brown.
  5. Cool and Store:
    Remove from the oven and let the cookies cool for 2–3 minutes on the baking sheet before transferring to a wire rack. Once completely cool, store in an airtight container.

Tip for High Altitude Bakers:
Increase oats to 2 cups and reduce whole wheat flour to ¾ cup for the perfect texture.
