Chunky Apple Cranberry Sauce

- 1 cup chopped onion
- ⅓ cup olive oil
- ⅓ cup honey
- 4 tsp red wine vinegar

- ¼ tsp ground cinnamon
- Freshly ground black pepper, to taste
Directions
- Combine Ingredients: In a medium saucepan, stir together cranberries, apples, onion, olive oil, honey, red wine vinegar, ginger, cinnamon, and a dash of freshly ground black pepper.
- Cook: Heat the mixture over medium-high heat until it reaches a boil.
- Simmer: Lower the heat, cover, and let the mixture simmer for about 15 minutes, stirring occasionally, until the cranberries burst and the apples soften.
- Cool: Remove from heat and allow the sauce to cool to room temperature.
