Chunky Apple Cranberry Sauce

This tangy and slightly sweet sauce pairs beautifully with holiday meals or as a condiment for sandwiches.

Yield: Makes 4 cups

Ingredients

  • 2 cups fresh cranberries
  • 2 tart apples, peeled if desired, sliced into ¼-inch slices
  • 1 cup chopped onion
  • ⅓ cup olive oil
  • ⅓ cup honey
  • 4 tsp red wine vinegar
  • ¼ tsp ground ginger
  • ¼ tsp ground cinnamon
  • Freshly ground black pepper, to taste

Directions

  1. Combine Ingredients: In a medium saucepan, stir together cranberries, apples, onion, olive oil, honey, red wine vinegar, ginger, cinnamon, and a dash of freshly ground black pepper.
  2. Cook: Heat the mixture over medium-high heat until it reaches a boil.
  3. Simmer: Lower the heat, cover, and let the mixture simmer for about 15 minutes, stirring occasionally, until the cranberries burst and the apples soften.
  4. Cool: Remove from heat and allow the sauce to cool to room temperature.
  5. Store: Transfer to a container, cover, and refrigerate until ready to serve.

Serving Tip:
Serve chilled or at room temperature alongside roasted meats or as a festive topping for crackers and cheese. This sauce keeps well in the refrigerator for up to a week.
