Ingredients
For Herb Blend:
- 2 oz fresh thyme
- 2 oz fresh parsley
- 1 oz fresh rosemary
For Honey-Citrus Glaze (Yields ~2 cups):
- 3 cups fresh orange juice
- 8 oz honey
- 1 tsp cayenne pepper
- 1 tsp kosher salt
For Candied Pecan Dust:
- 4 oz candied pecans
- 1 tsp ground cayenne pepper
For Chicken Wings (per serving):
- 3 oz (about 2) cooked chicken wings
- 2 oz Honey-Citrus Glaze (recipe below)
- ½ oz Candied Pecan Dust (recipe below)
- Orange zest (as needed, for garnish)
- Herb Blend (as needed, for garnish)
Directions
For the Herb Blend:
- Strip the thyme, parsley, and rosemary from their stems.
- Finely chop the herbs using a sharp knife.
- Store in a covered container, label with the date, and refrigerate.
For the Honey-Citrus Glaze:
- Heat orange juice in a saucepan over medium heat and reduce by one-third.
- Add honey, stirring until fully dissolved.
- Mix in cayenne pepper and salt until completely blended.
- Remove from heat and cool rapidly.
- Transfer to a container, cover, label, and refrigerate.
For the Candied Pecan Dust:
- Add candied pecans and cayenne pepper to a food processor. Pulse until coarsely chopped.
- Store in a covered container, label with the date, and refrigerate if needed.
For the Chicken Wings (per serving):
- Toss cooked chicken wings in Honey-Citrus Glaze until fully coated.
- Place glazed wings on a sizzle tray or baking sheet.
- Bake in a 500°F oven for 3 to 4 minutes to set the glaze.
- Plate the wings and garnish with Candied Pecan Dust, orange zest, and Herb Blend.
