Honey Garlic Glazed Hasselback Potatoes

Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons butter, melted
  • 2 tablespoons East Coast Honey
  • 3 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

Preheat your oven to 375°F. Wash and dry the potatoes, then carefully slice thin cuts across each potato without cutting all the way through. Placing wooden spoons or chopsticks on either side of the potato makes this step much easier.

Brush the potatoes with olive oil and season with salt and pepper. Bake for about 35 minutes.

Meanwhile, combine the melted butter, East Coast Honey, minced garlic, and Dijon mustard in a small saucepan. Warm the mixture over low heat until everything is well blended and fragrant.

Remove the potatoes from the oven and generously brush the honey garlic glaze between the slices and over the top. Return them to the oven for another 25 to 30 minutes, brushing with more glaze halfway through, until the potatoes are tender inside and perfectly crisp on the edges.

Garnish with freshly chopped parsley and serve immediately.
